You can do what you are asking. There are rules that you must follow for adding objects at each layer of map hierarchy.
For example. Click on the ethernet segment symbol symbol, and then pull-down Tools --> Display Object Infromation.
Then, Label it whatever you like and cut and paste symbols from the old larger segment into the new (Bus) segment.
