First... I'm talking about the NT version. I don't know about the
UNIX version.

The out-of-the-box function is to only do port-checks.

When you startup nvsniffer manually, you can specify the "-r" switch.
This submits it as a batch job to re-run itself every -r minutes.

You can write a DLL, or you can specify a script. I usually specify
a perl script to be executed. This is done with the "-c \path\command"
switch.

You can also specify a timeout value "-T nn", and the number of threads
to run "-t n". I usually default the timeout, but limit the number of
threads (since the default is 50).

If you type "nvsniffer -h" (assuming path-variable is set) you will
get a list of nvsniffer options.

I think by default nvsniffer is simply a TCP port scanner, tell me if I
am wrong. It pings the port to see if it exist, then it adds it to the
database. I use it to discover services or applications where I know
exactly which TCP port it uses. If you application uses dynamic port as
some I have seen, I have to write a custom .DLL to detect them. I
found nvsniffer most useful during initial discovery. I found the
status check function to be somewhat inacurate, by default it checks
once every hour on the NT version. When a service goes Down, you have
to wait an hour before the system will try it again. If there's a easy
to launch nvsniffer against a particular service on demand, it may be
more helpful.
