Iris,
fields that are once added to the database cannot be removed any more.
Also if you assign a field to an object (while setting a value to it) you
can no more remove that field from this object.
But you can set the field to whatever you want. Take a look at the manpage
of nvdbimport.
If you really wants to get rid of such an "old, self created" field
(without clearing the whole database)
I can send you a little tool I wrote in the past using the NetView API.
